For this reason, the production process of the Azienda Agricola Armato Cristina involves the use of donkeys to naturally clean and fertilize the land and the recovery of the pomace, which is partly spread on the ground. The latter represents a by-product of the oil extraction process from which the peanut is obtained: a waste product, with a great calorific value, deriving from the processing of olives.

The heart of the Armato olive groves is the Prao di Conti olive grove purchased by the Counts of Ventimiglia: a meadow that has become an olive grove with centuries-old trees, from which the olives used for the production of Riviera Ligure DOP extra virgin olive oil come from Riviera dei Fiori - "Cru Prao di Conti ”. An oil of the highest level that has received numerous awards, including the Silver in London in 2020.
