    Asiago DOP Stravecchio Prodotto della Montagna is a premium product by the Caseificio Pennar Dairy. Made with raw, semi-skimmed milk from the mountain pastures and dairies of the Asiago Plateau, it is produced using the age-old method of natural skimming. The production of this cheese involves an extremely long manual processing procedure: the cheese-makers refine and turn the cheese by hand on spruce boarding every day for a minimum of 36 months. The prolonged maturation on spruce boards enables the cheese to develop unique organoleptic characteristics. Asiago DOP Stravecchio Prodotto della Montagna has a hard and firm rind, is straw yellow in colour, and has a strong and fragrant taste with hints of fresh fruit, strawberries and wild berries. A highly versatile product, it lends itself to numerous different preparations and goes particularly well with structured red wines. The Asiago PDO Stravecchio Prodotto della Montagna is a prize-winning product, having won the "Best Italian cheese" award.
